AROMA

Aroma is the sensory impression of a food or other substance, and is determined mainly by the chemical senses of taste and smell. The "trigeminal senses", which detect chemical irritants in the mouth and throat as well as temperature and texture, are also very important to the overall Gestalt of Aroma perception. The Aroma of the food, as such, can be altered with natural or artificial flavorants, which affect these senses.

CURRY

A prominent feature of Indian Cuisine is the liberal use of fresh, aromatic herbs. Dishes are seasoned with spices like cumin, cardamom, cloves, cinnamon, and nutmeg, and with leafy herbs such as coriander, mint, and last but not least, curry leaves. Curry leaves are an essential ingredient in most dishes cooked in South India and also in other parts of India like Gujarat, Maharashtra, and Orissa. The mouth watering aroma of fried curry leaves is a vital part of experiencing South Indian dishes like Dosa, Idli, Sambhar—Vada and coconut chutney. Gujarati dishes like Dhokala, Khandavi, and Marathi dishes like Poha and Upama make use of curry leaves too. These leaves—"curry patta" as they are called in Hindi—are small and deep green in color. Each leaf is a pinnate with ten to twenty leaflets.
